"Marry Me" Butter Bean Pasta

Indulge in the comforting flavours of this #EasyVegan "Marry Me" Butter Beans Pasta, a quick and easy dish packed with protein and fresh vegetables. Perfect for a satisfying weeknight dinner, this creamy and flavourful pasta will have everyone asking for seconds!

Ingredients
2 tbsp olive oil/oil from sundried tomatoes
1/2 onion, diced
3 garlic cloves, minced
6-8 sundried tomatoes, chopped
2 tbsp dried oregano
1 tbsp Italian seasoning
2 tbsp tomato paste
2 cup broccoli florets, chopped
1 can butter beans, strained
1 cup vegetable broth
1 can coconut milk
1/2 lemon, juiced
pinch of salt
8 oz (225 grams) pasta noodles
Directions
In a large skillet or saucepan, heat either olive oil or oil from the sundried tomatoes over medium heat. Add the diced onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-5 minutes.
Add the chopped sundried tomatoes, dried oregano, Italian seasoning, and tomato paste. Stir well to combine and cook for another 2 minutes.
Add the chopped broccoli florets, strained butter beans, vegetable broth, and coconut milk to the skillet. Stir everything together.
Squeeze in the juice of 1/2 lemon and add a pinch of salt. Mix well.
Bring the mixture to a boil, then reduce the heat and let it simmer for 15 minutes.
While the sauce is simmering, cook your favourite pasta noodles according to the package instructions. Drain the pasta and set it aside.
Once the sauce has finished simmering, taste and adjust the seasoning if needed. Add the cooked pasta to the skillet with the sauce. Toss to coat the pasta evenly with the sauce.
Serve the pasta hot, garnished with fresh herbs or red pepper flakes if desired. Enjoy!
