Vegan Cosmic Brownies

These ultra-fudgey vegan brownies are topped with a silky chocolate ganache and colorful sprinkles for a fun, nostalgic treat that's out of this world! Made in one bowl with simple ingredients- no eggs, no dairy, super fun!!

Vegan Cosmic Brownies

Ingredients


For the Brownies -

  • 1/2 tbsp aquafaba (chickpea water)

  • 1/2 tsp cream of tartar


  • 1/2 cup vegan butter, melted

  • 1 cup granulated sugar

  • 1/2 cup packed brown sugar

  • 3/4 cup cocoa powder, sifted

  • 1 tbsp maple syrup

  • 1 tsp vanilla extract

  • 1 cup all-purpose flour

  • 1 tbsp cornstarch

  • 1/4 tsp salt


For the Frosting -

  • 1/2 cup full-fat canned coconut milk (or soy milk)

  • 1 1/2 cups semisweet chocolate chips

  • 1/4 cup candy-coated chocolate chips or sprinkles


Directions

  1. In a large bowl using a stand or handheld mixer, whip aquafaba and cream of tartar for 8–10 minutes until soft peaks form.

  2. Add in white sugar and brown sugar.

  3. Add melted vegan butter, mayple syrup, and vanilla. Mix until glossy and combined.

  4. Sift in flour, cornstarch, cocoa powder, and salt. Fold until just combined.

  5. Spread batter into a parchment-lined and lightly greased 8×8" pan.

  6. Bake at 375°F (175°C) for 20-22 minutes. Let it cool completely in the pan.

  7. Make the genache while the brownies cool. Microwave the coconut / soy milk for 1 minute, then add chocolate chips. Let sit for 3 minutes, then stir until smooth.

  8. Pour ganache over cooled brownies, smooth the top, and sprinkle with vegan candy or sprinkles.

  9. Chill in fridge 1–2 hours or until set. Slice and enjoy!
