Hidden Heart Sugar Cookies (Vegan!)

Ever wished your cookies had a little surprise inside? These hidden heart sugar cookies are soft, buttery, and completely vegan! Perfect for Valentine’s Day, birthdays, or when you just feel like making something cute! 🌸✨

Ingredients
For the Cookies-
1 cup vegan butter
1 cup granulated sugar
1 tsp vanilla extract
4 tbsp plant milk (soy, oat, almond, etc.)
1 tbsp cornstarch
1 tbsp lemon zest
2 1/2 cups all-purpose flour
1/2 tsp baking powder
1/2 tsp salt
Directions
1. Beat vegan butter, sugar, and lemon zest until fluffy (about 3 minutes).
2. Add in soy milk and vanilla, mixing until combined.
3. Add flour, cornstarch, baking powder, and salt all at once, mixing until the dough comes together.
4. Remove 1/3 of the dough and dye it pink or red.
5. Roll out the pink dough to about 1/2 inch thick, then use a small heart cutter to cut out hearts. Stack them together to form a log.
6. Freeze the heart log for 30 minutes, or until solid.
7. Press the plain dough all around the frozen heart log, rolling into a smooth log. (Optional- gently brush the ohtside with oil and roll the dough in sprinkles 🌈)
8. Wrap in plastic wrap/parchment paper and chill for at least 30 minutes.
9. Preheat oven to 350°F and line two baking sheets with parchment paper.
10. Slice into 1/4-inch rounds, place on baking sheets, and bake for 12 minutes.
11. Let cool before serving. Enjoy!!!
