Subway Cookie Dupe - the Vegan Version

Craving the classic taste of Subway's Chocolate Chip Cookies? Try my easy vegan version, made with smooth, soft dough, gooey chocolate chips, and a secret ingredient (rhymes with shm-aquafaba) for that perfect chewy texture!

Subway Cookie Dupe - the Vegan Version

Ingredients


For the Cookies-

  • 1 cup vegan butter 

  • 1/2 cup granulated sugar 

  • 1/2 cup brown sugar

  • 1 tbsp vanilla extract

  • 2 tbsp aquafaba (chickpea water)

  • 1 1/2 cups all-purpose flour

  • 1 tbsp cornstarch

  • 1/2 tsp baking soda

  •  1/2 tsp salt

  • 1 cup semi-sweet chocolate chips


Directions


  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

  2. In a large mixing bowl, cream together the vegan butter, granulated sugar, and brown sugar until smooth and well combined.

  3. Add the vanilla extract and aquafaba, and mix until fully incorporated.

  4. Add the flour, cornstarch, baking soda, and salt directly into the same bowl. Stir everything together until just combined—be careful not to overmix.

  5. Fold in the chocolate chips until evenly distributed throughout the dough.

  6. Scoop about 2 tablespoons of dough per cookie and place them on the prepared baking sheets, leaving space between each for spreading.

  7. Bake for 10-12 minutes, or until the edges are lightly golden and the centers are still soft.

  8. Let the cookies cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely. Serve and enjoy!
