Baked Tofu Deli Slices (Vegan Deli Meat)

These Baked Tofu Deli Slices are a total game-changer for easy vegan lunches. It’s savoury, flavourful, and incredibly simple—just slice, pour, and bake. Perfect for stacking in sandwiches, rolling into wraps, or snacking straight from the fridge.

Ingredients
For the Marinade:
1 block (16 oz) super firm tofu, thinly sliced
1 cup vegetable broth (or water + bouillon)
2 tbsp nutritional yeast
1 tsp miso paste
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil (or any neutral oil)
1 tsp apple cider vinegar
pinch of salt
Directions
Preheat oven to 425°F (218°C). Line a large baking sheet with parchment paper.
Thinly slice the tofu using a knife or mandoline. Try to keep slices even and thin—this helps them soak up the flavor and bake evenly.
In a bowl or measuring cup, whisk together the vegetable broth, miso, garlic powder, onion powder, nutritional yeast, olive oil, apple cider vinegar, and salt.
Lay tofu slices in a shallow dish and pour marinade over top. Let sit for 10–15 minutes to soak (optional but adds flavor).
Pour everything—yes, including the marinade—onto the lined baking sheet. Spread tofu into a single layer. It will look watery at first; that’s totally fine!
Bake for 20 minutes, flipping halfway through. The liquid will mostly absorb or cook off, and the tofu edges will get golden and slightly crisp.
Let cool slightly and serve in sandwiches, wraps, or grain bowls. Store leftovers in an airtight container in the fridge for up to 5 days.
