Easy Vegan Dinner Rolls

Ingredients:

For the Dough:

  • 1 1/2 cups plant milk (oat, soy, etc.)

  • 1/2 cup water

  • 4 1/2 tsp active dry yeast (2 packets)

  • 2 tbsp sugar

  • 5 cups all-purpose flour

  • 1 teaspoon salt

  • 1/2 cup vegan butter, melted

For Vegan Egg Wash:

  • 2 tbsp plant milk

  • 1 tbsp maple syrup or agave nectar

  • 1 oil/melted vegan butter

Directions:

  1. Warm the plant milk in the microwave until lukewarm (like bathwater). Add the dry yeast and sugar, stir, and let sit for about 5 minutes until frothy.

  2. In a large mixing bowl or stand mixer, combine the flour, salt, and melted butter.

  3. Slowly pour the frothy plant milk mixture into the dry ingredients, 1/3 at a time, mixing as you go. Knead the dough for 3-5 minutes with a stand mixer or 5-7 minutes by hand, until a soft, slightly sticky dough forms.

  4. Place the dough in a large greased bowl, cover, and let it rise in a warm spot for 1 hour, or until it has doubled in size.

  5. Once the dough has doubled, lightly flour your work surface. Divide the dough into 18 equal portions (about the size of a golf ball). To shape each bun, cup the dough piece with your hand, roll it gently against the surface in a circular motion, and tuck the edges underneath to form a smooth ball. Place each bun seam-side down in a greased 9x13-inch baking dish, ensuring they are touching each other to create the classic dinner roll look.

  6. Cover the baking dish with a towel and let the buns rise for another 30 minutes while preheating the oven to 375°F.

  7. In a small bowl, whisk together the vegan egg wash. After the second rise, lightly brush the tops of the rolls with the wash using a pastry brush or the back of a spoon.

  8. Bake for 15-20 minutes, or until the rolls are golden brown.

  9. Let the rolls cool in the pan for 5 minutes before serving. Enjoy the warm, fluffy goodness and the delightful aroma filling your kitchen!
