Vegan Ranch Chick'n Crunch Wrap (McDonald's)

Ingredients

  • 8 Gardein Meat-Free Seven Grain Crispy Tenders/any Vegan Chick'n Tenders

  • 1/4 cup Cucumber, sliced

  • 1/2 cup Lettuce

  • 1/4 cup Sweet Chili Sauce

  • 1/2 cup Vegan Ranch Dressing

  • 2 Flour Tortillas

Vegan Ranch

  • 1 cup raw cashews (soaked for 10 minutes in hot water)

  • 1/2 cup fresh water

  • 1 tablespoon lemon juice

  • 2 tsp garlic powder

  • 2 tsp onion powder

  • 1 tsp dried parsley

  • 1 tsp dried dill

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/4 cup olive oil

  • 1 tbsp apple cider vinegar

  • 1 tbsp vegan mayo

  • 1 tsp maple syrup (optional, for added sweetness)


Directions

  1. Prepare the Vegan Ranch Dressing by soaking 1 cup of cashews in boiling hot water and set aside.

  2. Cook the Gardein Crispy Tenders (or your preferred vegan chick'n nuggets) according to package instructions until crispy and golden brown.

  3. Return to the soaking cashews. Drain the water and place the cashews into a blender. Add fresh water, lemon juice, garlic powder, onion powder, parsley, dill, salt, pepper, olive oil, apple cider vinegar, vegan mayo, and optional maple syrup and blend until smooth.

  4. Warm the flour tortillas in the microwave or on a skillet until pliable and start to prepare your wrap.

  5. Spread a generous amount of the Vegan Ranch Dressing on each tortilla.

  6. Divide the shredded lettuce evenly among the tortillas.

  7. Place thinly sliced cucumber on top of the lettuce.

  8. Once the Gardein Crispy Tenders/Vegan Chick'n Tenders are cooked, coat them in a generous amount of sweet chili sauce. Place four tenders on each tortilla.

  9. Fold the sides of the tortillas over the filling, then roll them up tightly from the bottom to enclose the filling. Grill the wraps if desired.

  10. Serve the wraps immediately while they are still warm. Enjoy your delicious homemade vegan version of McDonald's Ranch Chicken Snack Wrap!
