Vegan Quesa-Pizza!

These little beauties taste just like cheesy quesadillas but bake up looking like a pizza! Crispy on the outside, melty on the inside, and packed with a flavourful black bean and veggie filling - so fun for dinner, parties, or kid-approved snacking.


Vegan Quesa-Pizza!

Ingredients-

  • ½ onion, chopped

  • 1 zucchini, diced

  • 1 bell pepper, diced

  • 2 cloves garlic, minced

  • 1 tbsp olive oil

  • 2 tbsp tomato paste

  • 1 can black beans, drained + rinsed

  • 1 cup vegetable stock

  • 1 tbsp chili powder

  • 1 tsp paprika

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp oregano

  • Pinch of salt

  • 6–8 regular or gluten-free tortillas (cut in half)

  • 2 cups shredded vegan cheese

  • Salsa, vegan sour cream, or avocado for serving


Directions-

  1. Heat olive oil in a skillet over medium heat. Add onion, zucchini, bell pepper, and garlic. Sauté 2–3 minutes until slightly softened.

  2. Stir in tomato paste, black beans, vegetable stock, and all the spices. Bring to a boil, then reduce heat and simmer for 10 minutes until thickened.

  3. Preheat oven to 400°F (200°C). Line a baking sheet or pizza pan with parchment paper.

  4. Cut each tortilla in half. Sprinkle vegan cheese on the cut side, then spoon about 2 tablespoons of filling in the center. Fold into a triangle pocket, tucking the sides to seal.

  5. Place seam-side down on the baking sheet. Sprinkle extra vegan cheese on top.

  6. Bake for 8 minutes, until golden and crispy.

  7. Serve hot with salsa, vegan sour cream, or avocado, or just enjoy them as-is!
