Let's make the viral Curry Dumpling Dump & Bake— vegan style! This easy one-pan dinner is packed with cozy Thai-inspired flavours, creamy coconut milk, and tender vegan dumplings for a no-fuss, crowd-pleasing meal.


Vegan Curry Dumpling Bake

Ingredients

  • 2 tbsp olive oil

  • 1 tbsp ginger

  • 2 garlic cloves, minced

  • 2–3 tbsp red Thai chili paste

  • 1 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tsp curry powder

  • 1 tsp sugar or maple syrup

  • 1 can coconut milk

  •  2–3 bok choy, chopped

  • 12–18 vegan dumplings

  • Juice of 1 lime


Directions

  1. Preheat oven to 400°F (200°C).

  2. Add all ingredients to a 8x12 or 9x13 baking dish and stir gently to combine.

  3. Cover loosely with foil.

  4. Bake for 20–25 minutes, until dumplings are cooked through and bubbling.

  5. Garnish with chili crisp and sesame seeds.

  6. Serve and enjoy!
