Slow Cooker Butter Tofu

Craving comfort food made easy? This Slow Cooker Vegan Butter Tofu is rich, creamy, and bursting with warm spices—perfect for a fuss-free, cozy dinner. 🧡

Ingredients:
1–2 blocks firm tofu, cubed or torn into chunks
2 tablespoons vegan butter
1 small onion, minced
2 garlic cloves, minced
3 tablespoons tomato paste
2 tablespoons nutritional yeast
1 tablespoon curry powder
1 teaspoon turmeric powder
1 teaspoon ground ginger
1 teaspoon cumin
1 teaspoon red pepper flakes (adjust to taste)
1 tablespoon rice vinegar
1 can (13.5 oz) coconut milk
1/2 cup vegetable stock
splash of lemon juice
1 cup green peas (to be added 15 minutes before serving)
salt to taste
Directions:
Into your slow cooker, add the tofu, vegan butter, onion, garlic, tomato paste, nutritional yeast, curry powder, ginger, red pepper flakes, maple syrup, rice vinegar, coconut milk, vegetable stock, and a splash of lemon juice and stir to combine.
Cover and cook on high for 4 hours or low for 6–8 hours, stirring occasionally if possible.
About 15 minutes before serving, stir in the peas and let them heat through.
Taste and adjust the seasoning with salt and additional lemon juice, if needed.
Serve hot over steamed rice or with warm naan bread. Serve and enjoy!
