Silken Tofu Double Chocolate Brownies

Ingredients

For the Brownies:

• 1 package (12-14 ounces) silken tofu

• 1 cup semisweet chocolate chips

• 1/2 cup cocoa powder

• 1/2 cup granulated sugar

• 1/4 cup vegetable oil

• 1 teaspoon vanilla extract

• 1/2 teaspoon baking powder

• 1 teaspoon salt

• 1/2 cup all-purpose flour

• 1/2 cup chocolate chips (for coating and freezing)


Instructions:


1. Begin by coating the chocolate chips for the brownies: Toss the 1/2 cup chocolate chips in a little bit of flour to coat them lightly. Spread them out on a parchment-lined baking sheet and place them in the freezer for about 15-30 minutes to firm up.

2. Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper.

3. In a microwave-safe bowl, melt 1 cup semisweet chocolate chips in 30-second intervals, stirring between each interval, until smooth. Alternatively, you can melt the chocolate chips using a double boiler.

4. In a food processor or blender, blend the silken tofu until smooth.

5. Add the melted chocolate chips, cocoa powder, sugar, melted coconut oil, vanilla extract, baking powder, and salt to the blender with the tofu. Blend until well combined and smooth.

6. Pour the brownie mixture into a large bowl and fold in the flour until just combined. Be careful not to overmix.

7. Remove the coated chocolate chips from the freezer. Gently fold them into the brownie batter.

8. Pour the brownie batter into the prepared baking pan and spread it evenly.

9. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.

11. Once the brownies are baked, remove them from the oven and let them cool completely in the pan. Slice the brownies into squares and serve.
